Milk dishes without the gluten surprises
Cooking with milk for someone who cannot have gluten is rarely difficult until a familiar shortcut slips in. The risk is often not the milk, cheese or yoghurt, but soy sauce in a savoury dish, a stock cube in soup, flour used to thicken a sauce, or crumbs added before frying. This collection keeps the comforting milk-based choices while making those usual hiding places easier to spot and replace.

Which milk-based dishes are most likely to hide gluten?
Soups, chowders, casseroles and savoury sauces are the main trouble spots because they may use stock cubes, wheat flour or a seasoning mix for body and flavour. A baked potato or simple mash is usually easier to check, but flavoured fillings, cheese sauces and prepared toppings can still contain flour. Bread, pasta, wraps and crumb coatings are obvious sources, while soy sauce and malt-based seasonings are easier to miss.
How can I thicken a soup or cheese sauce without gluten?
Use cornflour mixed with cold water, or blend part of the cooked vegetables or potatoes into the liquid for a thicker soup. For a cheese sauce, a gluten-free roux made with gluten-free flour and butter works, as does reducing the milk gently before adding cheese. Add the thickener gradually and check the label, because some stock powders and ready-made sauces contain wheat even when the dish itself does not.
What should two people check when cooking one gluten-free meal?
Read the labels on shared staples before cooking, particularly stock, soy sauce, spice blends, mustard, cheese sauces and mayonnaise. Keep a separate clean spoon, chopping board and colander if gluten has been used in the kitchen, since crumbs and flour can transfer to an otherwise suitable meal. It is usually simpler for both people to eat the same verified dish than to finish one portion with an unexamined sauce or garnish.
